Keto Garlic Butter Shrimp with Asparagus
Ingredients
- 1 lb large shrimp, peeled and deveined
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 3 tbsp unsalted butter
- 3 cloves garlic, minced
- 1 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp smoked paprika
- ½ tsp red pepper flakes (optional)
- 1 tbsp fresh lemon juice
- 1 tbsp chopped parsley (for garnish)
- ¼ cup grated Parmesan (optional)
Instructions
- Prepare the Shrimp – Pat the shrimp dry with a paper towel. Season with salt, pepper, and smoked paprika.
- Cook the Shrimp – Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, until pink and slightly crispy. Remove from the skillet and set aside.
- Sauté the Asparagus – In the same skillet, melt butter over medium heat. Add the asparagus and cook for 3-4 minutes, stirring occasionally, until tender but still crisp.
- Add Garlic and Spices – Stir in the minced garlic and red pepper flakes, cooking for 30 seconds until fragrant.
- Bring Back the Shrimp – Return the shrimp to the skillet. Drizzle with lemon juice and toss everything together to coat.
- Finish and Serve – Remove from heat and sprinkle with chopped parsley. If using, top with grated Parmesan for extra flavor. Serve immediately.
