Keto Garlic Butter Shrimp with Asparagus

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 3 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp smoked paprika
  • ½ tsp red pepper flakes (optional)
  • 1 tbsp fresh lemon juice
  • 1 tbsp chopped parsley (for garnish)
  • ¼ cup grated Parmesan (optional)

Instructions

  1. Prepare the Shrimp – Pat the shrimp dry with a paper towel. Season with salt, pepper, and smoked paprika.
  2. Cook the Shrimp – Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, until pink and slightly crispy. Remove from the skillet and set aside.
  3. Sauté the Asparagus – In the same skillet, melt butter over medium heat. Add the asparagus and cook for 3-4 minutes, stirring occasionally, until tender but still crisp.
  4. Add Garlic and Spices – Stir in the minced garlic and red pepper flakes, cooking for 30 seconds until fragrant.
  5. Bring Back the Shrimp – Return the shrimp to the skillet. Drizzle with lemon juice and toss everything together to coat.
  6. Finish and Serve – Remove from heat and sprinkle with chopped parsley. If using, top with grated Parmesan for extra flavor. Serve immediately.
